White Chili


1 tablespoon olive oil
1-2 C cubed chicken or turkey
1 onion, chopped
2 cups chicken broth (1 can)
1 (4 ounce) can diced green chilies or jalapeƱo
1 teaspoon garlic powder or 1 Tb minced garlic
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon dried cilantro
1/8 teaspoon cayenne pepper
1 (15 ounce) can cannellini beans (or any white bean)
Optional chopped bell pepper and or chopped mushrooms
2 green onions, chopped for garnish
2 ounces shredded Monterey Jack cheese

Heat oil in a large saucepan over medium-high heat.  Cook onion and other veggies in oil 4 to 5 minutes, or until tender.  Stir in remainder of ingredients.  Reduce heat, and simmer for 15 minutes or more. Garnish with green onion and shredded cheese.
